Her research focuses on improvement of nutritional composition of food through biofortification of staple foods; since the challenge of under and mal-nutrition in Nigeria remains undefeated. She has special interest in the application of food processing technologies for nutrient enhancement and digestibility as well as denaturation of antinutrients present in food.
